15-21 Days. Eye-catching 'Early Wonder' beet microgreens are a popular choice among chefs and home cooks alike. Their mild flavor is the perfect complement atop grilled meats, mixed with salad greens, or eaten like a sprout. Hard to find in stores and always fresh when homegrown. For optimum flavor and freshness, use microgreens immediately after harvest. Beet microgreens can be grown indoors at any time of year and are a nutrient-packed way to get your “green fix” in the dead of winter. Move containers as needed for best light exposure and temperature. Harvest when first leaves appear and enjoy! Detailed sowing instructions inside packet.

When to Sow Outside:Not recommended. Microgreens are fragile, and outdoor growing conditions make them difficult to clean.

When to Start Inside: RECOMMENDED. Sow indoors any time of year. For a continual crop, sow every 10 to 14 days.

Special Sowing Instructions: Use a shallow container with 1”–2” of potting soil. Sow seeds in a single layer, and cover with 1/2" of soil.

Harvesting: When seedlings emerge, the first pair of leaves to show are the cotyledons, which can look very different from the leaves that follow, called “true” leaves. Beet microgreens are ready to harvest 15 to 21 days after sowing, when they have cotyledons. Cool growing temperatures may slow germination and growth. Harvest by cutting just above the soil line.
