50 days. 'Red Dragon' will tempt you with its rich green leaves accented by stunning red veins and midrib. Its complex flavor is zesty and peppery. Add to salads, stir-fries, pasta dishes, as a topping for sandwiches and on pizza. Grow young, tender baby greens in just a few weeks or enjoy full size in less than two months. Wild arugula is perennial in USDA zones 6 to 10.

When to sow outside: RECOMMENDED. 2 to 4 weeks before average last frost, when soil temperature is at least 40°F; ideally 50°–70°F. Successive Sowings: Every 3 weeks until 4 to 6 weeks before the average first fall frost. Mild Climates: Sow in fall for winter harvest.

When to start inside: Not Recommended.

Harvesting: Young Dragon’s Tongue leaves have the best flavor and coloration. Pick leaves when at least 2” long but no longer than 4”; pick them individually or cut off the plant at ground level. Harvest before plant begins to flower, but you may allow the plant to flower if you plan to eat the flowers.
